What it is
The first time you connect a device running a particular OS build to Xcode, it copies that build's system symbols to your Mac so it can debug and symbolicate. They're stored per OS version and build in the DeviceSupport folders for iOS, watchOS, tvOS and visionOS.
Why it gets so big
Every OS update on every device you connect adds a new folder, and old ones aren't removed. If you test on several devices and keep them updated, these folders pile up, and each one can be a few GB.
Is it safe to delete?
Yes for versions you no longer run. If you connect a device on that OS version again, Xcode copies the symbols again, which takes a few minutes. Folders for the versions on devices you're actively debugging are worth keeping to avoid that wait.
